BBQ Pork Ribs – Plum, coffee and chipotle.
There is something rare and beautiful about the weather that we have been experiencing for the past couple of days. The typically miserable summers that we are subjected to have been ditched, instead, they have been replaced by sun-drenched evenings and weekends that have lured people outside to enjoy a great British summer.
As we all know, as soon as the sun comes out so do the barbecues.
Coffee might not be the first thing that springs to mind when devising a list of barbecue-must haves, but in our eyes it should be up there alongside the sausages, steaks and the vegetarian options – and no, we aren’t just saying that because we’re huge fans of the stuff.
This sticky recipe will convince sceptics and wow foodies. So give it a try while the sun is still out!
Ingredients
- 1,125g (2 ½lb) pork ribs
- 1 tablespoon of freshly ground coffee – or to taste!
- 90ml of Plum sauce
- 60ml of freshly squeezed orange juice
- 2 tablespoons of brown sugar
- 2 tablespoons of chipotle (diced) in adobo, with sauce
Method
- Mix the freshly ground coffee with a sprinkling of hot water together in a saucepan before adding the plum sauce, orange juice, chipotle and brown sugar.
- Bring the sauce to the boil before reducing the heat and allowing it to simmer until thick. Stir regularly.
- Season with salt and pepper, as required.
- Coat the ribs with this now sticky sauce and add to the barbecue
- Cook!
It might take a while to cook properly on the barbecue, but the best meals often do. Keep using the remaining sauce to baste the rips whilst they slowly cook – You’ll thank us for it!
